Where the flavors of the Canadian Market are showcased with a menu reflecting the changing seasons and focuses on the simplicity of fine ingredients.

Robin has always made the connection between food and cooking. Growing up in Calgary AB, his first initiation in a professional environment was in a small hotel that inspired him to continue in the career and attend the Southern Alberta Institute of Technology.

Bowen’s passion grew when working with mentor David Picciotto at The Wine Gallery, a vibrant downtown Calgary hotspot, which allowed Robin the opportunity to experiment with new products that sparked his creativity. Expanding his career, Robin moved to Edmonton AB to work with chef/owner Shonn Oborowsky of Characters Fine Dining where his leadership and cooking abilities developed into becoming the restaurant chef. After five years Robin returned to his hometown, taking the position executive chef of Vintage Chophouse with Ned Bell to create and reprise contemporary modern chophouse cuisine, inspired by the local Alberta products. Now heading east to Ottawa ON, Robin is excited to bring his passion and style of cuisine to the capital city.

Chef Robin Bowen handpicks his brigade of chefs similar to his ingredients. Supporting local culinary programs and picking staff that share the same passion and dedication for cuisine.

There are no shortcuts, good food comes from the heart and soul; it’s about respecting the ingredients and taking time and great care in its preparation..
